The Czhili was Good, But So Was The Street Food
The Flatonia Czhilispiel always offers some great street food outside the big tent on Main Street, and this year one vendor really hit it out of the park. Oh My Pizza Pie, a mobile wood-fire pizza kitchen, offered the best pizza anywhere in Fayette County, but only for a few days.
Jake Wright of San Marcos runs the operation, along with his pizza-making sidekick Reagan.
The rig is a wood-fired pizza oven mounted on a lowboy trailer, along with a few temporary walls made of tarp strung up off the trailer.
The two dish out perfect 10-inch pies with a crust both chewy and crispy, as only a wood-fired oven can accomplish.
Toppings are simple. The duo offered us their spinach and garlic pie, topped with a balsamic vinegar glaze – which proved a perfect pairing with the Shiner beer we were drinking.
