Spaghetti for Two
Just a Thought
Cooking has never really been my thing. My mom was not much of a cook, so I learned one recipe (mistake) at a time as I got older. Eating, on the other hand, is both necessary for survival and quite enjoyable when the food tastes good.
Over the years, I have managed to find a few recipes that I could make palatable (or at least ones that my family would eat without too much complaint). The challenge as my family grew, was always how much food to cook. Most recipes were for a family of four. So, with my family of six I found myself doubling that recipe and having leftovers for lunch later in the week.
As time went on, I often was feeding extras who my children would bring home on any given evening. Sometimes it would be one more, other times it might be three or four more. I got to where I would keep extra things on hand so when the extras appeared, I could add to whatever I was cooking to make it stretch. Pulling an extra package of vegetables out of the freezer was always my first method of making a meal stretch. If it was spaghetti night, I could always add more noodles and sauce to make sure I had enough.
