Remembering Monroe Schubert

Monroe Schubert was the pitmaster at Prause’s Meat Market for over 30 years. He died last Saturday, but is fondly remebered by his coworkers at Prause's.

“I started in ‘66 and he was here when I started,” Gary Prause said Tuesday. “He cooked barbecue into his late 70s – as a person, he was as good as they come.”

Mon’ roe (accent on the first syllable) was a big fan of Leopard football and, though he never went to college, of the University of Texas Longhorns as well, according to Gary.

Schubert never married. He took care of his mother until she went into the nursing home and then went to see her regularly.

Prause said Monroe kept up with his high school class. “He’d come in and say ‘Well, we lost another one.’ ”

Mark Prause took over as pitmaster after Schubert retired and recalled Schubert schooling him from the time he was 16 years old – “this is the way you do it.” One tip was at what temperature to wrap the brisket after it comes out of the pit, so it will be tender. (That temperature is a trade secret.)
